Steamed vegetables are a great option for meal time and healthy living straight up. The flavours you get from the blend of vegetables as they steam are really delicious, and with a little dash of ground pepper and small pinch of coarse salt, they’re ready to serve.
The new year is upon us, and for many this means a fresh start. A renewed focus on diet and exercise often tops the charts for what we will work on in the year ahead. I decided to kick off the new year by sharing a quick and easy recipe for steamed veggies featured in a pretty vintage serving dish from Etsy boutique, Audrey Would! Vintage Home.
It’s never too late to try something new, and it’s always a good idea to focus on a healthy you!
Quick & Easy Steamed Vegetables
¾ cup white onion, chopped
¾ cup celery, chopped
¾ cup partially cooked carrots, chopped (save ¾ c cooking water)
½ red pepper, sliced
½ head orange cauliflower, broken into florets
Small handful snow peas, ends removed
Small handful green beans, ends removed
Small zucchini, chopped into chunky 1” pieces
Salt & Pepper, to taste
- Sautee chopped onions & celery in butter until lightly caramelized
- Add carrots and cooking water
- Add remaining vegetables
- Season with salt and pepper
- Cook uncovered, stirring periodically until the liquid is gone
Prep time 30 minutes / Makes enough for 4
To mix things up we sometimes add a splash of lemon juice or white wine, and maybe even par-cook the carrots in chicken stock – it just depends. If you have the basics to work with, the possibilities are endless.
Serve in a Fabulous Vintage Dish
If you have a fabulous vintage serving dish, it adds the finishing touch. Choose a clear glass bowl and the colour of the veggies will pop!
Why order take-out when you can whip up a quick, healthy mix like this, and especially when you know your take-out will never come in a beautiful vintage bowl like this!
Do you have a favourite vintage serving bowl for easy recipes like this? I’d love for you to take a photo and share it on Instagram with the hashtag #audreywouldvintagehome and #audreywould so others can find it too!
